Chef David Santos, who is the Chef/Partner of Louro in NYC, looked to two Marvel favorites for this recipe: New York and Nick Fury. "There’s nothing more quintessentially New York than pizza," Santos says. "I chose this recipe because I wanted to do a fun kind of pizza that was still reminiscent of New York, but with a slight twist that we do at the restaurant. For this recipe, I was inspired by Nick Fury, whose vengeful characteristics are mimicked in the spicy sauce used in this pizza. If I was Nick Fury, I would have a couple of beers ready to drink with this one!"

Nick Fury's Furious Fried Dough Pizza by David Santos

For the dough:
3 cups bread flour
2 tbsp salt
1 package active dry yeast
1 cup room temperature water
1 tsp sugar
2 tbsp olive oil 

Combine the flour and salt using an electric mixer. In a separate bowl, mix the yeast, water and sugar until the yeast is dissolved. Allow to sit for 5 minutes in order for the yeast mixture to bloom and activate. With the mixer on low speed, slowly add the olive oil and yeast mixture to the flour until a soft dough is formed. If the mixture is too wet, add a little more flour. Once the dough is formed, turn the mixer to medium speed and knead the dough for 5 minutes. Place the dough in a greased bowl, cover with plastic wrap, and allow to rest in a warm place. The dough should double in size in an hour. Punch and re-form the dough into a ball and allow to rest for another 20 minutes. While the dough is rising, make your sauce. 

For the Fury Sauce:
1/4 cup olive oil
1 cup red onion, diced
10 cloves garlic, sliced
1 tbsp red chili flakes
1 cup red wine
1 16 ounce can crushed tomatoes
10 basil leaves, roughly chopped
3 cherry peppers, chopped (seeds can be removed for less spice) 

Warm a sauce pot over medium high heat. Place the olive oil in the pot and add the onions and garlic. Sauté the onions for 5 minutes until slightly brown, but not caramelized. Add the chili flakes and sauté for another 30 seconds. Deglaze the pan with the red wine and allow to simmer for 2 minutes. Add the tomatoes and cook for 15 minutes over medium heat. To finish, add the basil and cherry peppers and allow to cool to room temperature. 

For the pizza:
3 cups shredded mozzarella 

Preheat the frying pan to 350F and the oven to 400F. Cut the dough into six equal parts. Roll each ball to about 1/8 of an inch thick; the shape of the balls do not have to be uniform, but they have to be of uniform thickness. Gently place the dough into the fryer. When the dough turns golden brown, flip it over to the other side and fry until that side turns golden brown. Drain on a sheet pan with paper towels and a rack to allow any excess oil to drip. Repeat with the remaining dough. Place the dough on a cookie sheet and divide the sauce and cheese equally among the fried dough balls. Place the pizza in the 400-degree oven for about 5 minutes, or until the cheese is melted.
